Red Velvet Cake with Basic Cooked Frosting

Red Velvet cake with Basic cooked frosting..........................  This was another first for us. With the cake I only used half the amount of red food die it calles for and it still had a great color. The cake is very fluffy and crumbled easily. It is not a dence cake at all. The flavor was very nice but I might do a wash on it next time so it is a little more moist. THE FROSTING!!!!!! holy crap, so fluffy so smooth so LIGHT! I would do a cream cheese frosting on this particular cake next time but I am so glad I made this frosting. I have not wanted to make it because it is cooked but glad I did. The mixing time is what matters on it. This is a beautiful frosting. we enjoyed it very much. Happy Cooking!!

Shipwreck and Hurry Casseroles............................................ with these two recipes I acctualy combine them. We LOVE to do this when we go camping because its easy to put it all in a duch oven and let it cook. It sticks with you and it feels like an all in one. This is a recipie I have made many times and we love it. Happy Cooking!

Cheesy Meatball Soup

Cheesy Meatball Soup.......   SOOOOO GOOD, We had this for dinner on a cold night and it is thick and hearty!! It fills you up so you can go sleadding, get wood or take a nap. Another first for us and a very nice surprise. We will have again. Happy cooking

Dairy Princess Milk Punch

  This was the first time I have ever made the Dairy Princess Milk Punch. It was actualy very good and creamy. We all agree that on a hot summer night this would make a great dessert. It makes A LOT so have people to shair it with. Happy Cooking!!

Taco Soup!

Hey!  We prepared our first Linda Haskett recipe of the year!  We actually made this soup over a week ago, but haven't had the opportunity to post until now. (Side note:  Today is Papa G's birthday, HAPPY BIRTHDAY Papa G!) Being as we just had Christmas and New Year's I was awfully done with grocery shopping and crowds and the kids wanted something made in our kitchen for dinner.  I decided on Taco Soup because 1.  It's quick, 2. Nearly all the ingredients are already on-hand in my pantry, 3. Soup is always a good idea in January. Honestly, I didn't have a few of the ingredients.  We omitted the olives and rather than stewed tomatoes I used crushed tomatoes.  Also, no canned corn so I tossed in a bag of frozen corn. I added a can of black beans. Overall, great success!  This recipe is a keeper for us and easy enough I'll make sure the kids know how to make it before college.  Lex even helped with the side of cornbread.
